Thymus 'Doone Valley' is a low-growing, mat-forming evergreen perennial herb highly prized for its vibrant variegated foliage and strong, refreshing citrus scent. The gold patches are most vivid during the cool weather of spring and winter. When stepped on or brushed against, the foliage releases a heavy, sweet lemon fragrance. Excellent for planting between flagstones, stepping stones, or paving crevices as it handles light to moderate foot traffic. It is also beautifully utilized in rock gardens, gravel pathways, or spilling over the edges of containers. From a culinary point of view, it i specifically valued for its complex lemon-thyme flavor bringing a vibrant, bright, citrus lift to dishes that standard thyme cannot. It requires a warm, open position with at least 6 hours of direct sunlight to maintain its golden variegation and tight growth habit, and thrives in poor, sandy, gritty, or stony soil.
